Au Gratin Carrots
ingredients
- 2 tablespoons butter
- 4 1/2 cups thinly sliced carrots (about 1 1/2 lbs)
- 2 tablespoons minced green onion
- 2 tablespoons all purpose flour
- 1 tablespoon chopped fresh parsley
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 cup milk
- 1 cup shredded Colby-Monterey Jack cheese blend
- 1 cup crushed potato chips

Preheat oven to 350F. Lightly grease a 9 inch baking dish.

In a large skillet, melt butter over medium heat. Add carrots and green onion; cook 6 minutes, stirring occasionally. Stir in flour, parsley, salt and pepper; cook 2 minutes, stirring occasionally. Add milk, cook 2 to 3 minutes, or until thickened. Stir in cheese. Spoon mixture into prepared baking dish; top with chips. Bake 30 minutes or until hot and bubbly.
