Carrot Cake
ingredients
- 3 C flour
- 3 C sugar
- 1 tsp salt
- 1 tbsp baking soda
- 1 tbsp cinnamon
- 1 1/2 C oil
- 4 large eggs - lightly beaten
- 1 tbsp vanilla
- 1 1/2 C walnuts (chopped)
- 1 1/2 C fine coconut
- 1 1/3 pureed carrots
- 3/4 C crushed pineapple (drained)

Preheat oven to 350

Grease 9x13 or 2 tube pans

Sift all dry ingredients together. Beat eggs, oil, sugar, vanilla, carrots together. Mix well and add pineapple, nuts, coconut. Pour into greased pan. Bake 1 hour or until done - may take 1 1/2 hours.
