Carrot Cake

ingredients

  • 3 C flour
  • 3 C sugar
  • 1 tsp salt
  • 1 tbsp baking soda
  • 1 tbsp cinnamon
  • 1 1/2 C oil
  • 4 large eggs - lightly beaten
  • 1 tbsp vanilla
  • 1 1/2 C walnuts (chopped)
  • 1 1/2 C fine coconut
  • 1 1/3 pureed carrots
  • 3/4 C crushed pineapple (drained)

    Preheat oven to 350

    Grease 9x13 or 2 tube pans

    Sift all dry ingredients together. Beat eggs, oil, sugar, vanilla, carrots together. Mix well and add pineapple, nuts, coconut. Pour into greased pan. Bake 1 hour or until done - may take 1 1/2 hours.

    Ice with cream cheese Icing
