Sunflower "Bean" Collard Wraps
These burrito style wraps will blow your mind…the south western flavors mesh to make a healthy and delicious lunch or dinner on the go, make these for a family picnic, watch as they disappear and even your toughest critics will rave about the taste!
ingredients
- 4 Large Collard Green Leaves
- 1/2 yellow bell pepper cut into thin, long strips
- 2 large carrots peeled and cut into matchsticks
- 1/2 c red cabbage shredded
- 1c radish or broccoli sprouts
- Sunflower “Beans”
- 1 1/2 c sunflower seeds soaked
- 1c sun-dried tomatoes marinated in olive oil
- 2t ground cumin
- 1t ground coriander
- 1t garlic powder or 1 clove garlic
- 1/2 -1t chipotle pepper
- 5T filtered water
- 1T lime juice
- 2 tomatoes
- 1/2 red bell pepper
- 4 green onions chopped
- 1/2 - 1c cilantro

Place sunflower seeds, sun-dried tomatoes, water, lime juice and spices in a food processor

And process until a thick paste forms. Remove and place in a large mixing bowl.

Add fresh tomatoes, bell pepper, green onions and cilantro to food processor(no need to wash in between). Process until smooth, then add to the bowl of sunflower paste and combine.

Lay collard leaves flat and spread with “beans”, top with veggies wrap up and enjoy!
