Minnie Blair's Lasagne, or Three Graces
“In this dish, three choicest ingredients-cheese, pasta and hamburger- meet in a melting mood. ”
"Brown 1 lb. crumbled hamburger in a skillet with 2 tablespoons salad oil and 2 garlic cloves, crushed. Add an 8 oz. can tomato sauce, a No. 2 can tomatoes, 1½ tsp. salt, ½ tsp. oregano and ¼ tsp. of pepper. Cover and simmer 15 to 20 minutes.
Meanwhile, cook ½ lb. very broad- 1½ inches wide- special lasagne noodles in boiling salted water until tender (about 15 minutes). Drain and rinse. Fill a rectangular casserole, if you have one- an oval one is almost as good- with mozzarella cheese (you’ll need about ½ lb.), ricotta cheese (you’ll need about ¾ lb.), tomato-meat sauce, grated parmesan (you’ll need in all about ½ cup), ending with a layer of sauce and Parmesan. (These Italian cheeses are available in chain stores throughout the country, but if you can’t get them, two other very mild cheeses, like Swiss gruyere and cottage for instance, will turn the trick).
Bake in a moderately hot oven, 375 F, for 15 to 20 min. It might well have been of this the three sirens sang."
