Bonnie's Fattouche Salad
A Levine/Yaphe favourite (with garlic of course!)
ingredients
SALAD- 2 medium pitas
- 1 bunch curly parsley
- 1 head romaine lettuce
- 2-3 ripe tomatos, diced
- 1/2 an english cucumber, diced
- 4 green onions (shallots), diced
- 3 tbsp lemon juice
- 2 tbsp fresh mint, chopped
- 3-4 tbsp olive oil
- 1 clove garlic
- salt and pepper to taste
directions
You can make this salad with or without the pitas. Toast them or put them in the oven for 10 minutes (keep an eye so they don’t burn). Once they are cooled down break the pitas into pieces and add to the salad. I usually double or triple the dressing recipe and you can make whatever quantity of salad you need, just add more of everything!
