Foil-Wrapped Apricot Chicken

ingredients

  • 4 boneless, skinless chicken breast halves
  • 1 tsp paprika
  • Salt and pepper
  • 2 tbsp apricot preserves
  • 1 tbsp Dijon mustard or horseradish

directions

Heat oven to 400°. Rip off four pieces of foil about 12x12 inches. Place 1 piece of chicken on each piece. Sprinkle each piece of chicken with paprika, salt and pepper. Divide apricot preserves and mustard amount the breasts and coat the chicken with the preserves and mustard. Fold up the foil to tightly enclose the chicken. Place in oven and cook 20 minutes or until chicken is done.
