Green Pea Salad

ingredients

  • 1 cup broccoli
  • 1 cup cauliflower
  • 10 oz frozen peas thawed
  • 1 large celery rib, halved lengthwise and thinly sliced
  • 1/4 cup thinly sliced Green onions
  • 5 Tbsp ranch dressing
  • 3 Tbsp fat free sour cream
  • 1/4 cup salted cashew pieces
  • 2 bacon strips, crumbled

directions

  • 1

    Cook broccoli and cauliflower, rinse in cold water, combine with peas, celery and onions. In small bowl combine dressing and sour cream. Stir in veggies, cover and refrigerate for at least an hour.

    Just before serving stir in cashews and bacon.
