BBQ Shrimp
ingredients
- 1 lb large prawns
- 1/3 cup light olive oil
- 1 tsp finely minced garlic
- 1 tbsp finely minced scallion
- 1/2 tsp finely chopped oregano (or 1/4 tsp dried)
- 1/2 tsp Kosher salt
- 1/4 tsp red pepper flakes
- 4 tbsp Chardonnay
- Salsa
- 1 1/2 cup finely diced melon
- 1/2 cup finely diced pineapple
- 1 tsp seeded and minced serrano chile
- 1/4 cup finely diced sweet red onion
- 2 tbsp light olive oil
- 1/2 tsp finely minced garlic
- 1 tbsp raspberry or other fruit vinegar
- 1 tbsp fresh lemon or lime juice
- 1/2 tsp honey
directions
Peel and devein the prawns leaving tails on. Whisk the remaining ingredients together and marinate prawns for 2 hours in fridge. Be careful not to over marinate. Skewer if desired, to facilitate grilling.
