ingredients

  • 1 lb large prawns
  • 1/3 cup light olive oil
  • 1 tsp finely minced garlic
  • 1 tbsp finely minced scallion
  • 1/2 tsp finely chopped oregano (or 1/4 tsp dried)
  • 1/2 tsp Kosher salt
  • 1/4 tsp red pepper flakes
  • 4 tbsp Chardonnay
  • Salsa
  • 1 1/2 cup finely diced melon
  • 1/2 cup finely diced pineapple
  • 1 tsp seeded and minced serrano chile
  • 1/4 cup finely diced sweet red onion
  • 2 tbsp light olive oil
  • 1/2 tsp finely minced garlic
  • 1 tbsp raspberry or other fruit vinegar
  • 1 tbsp fresh lemon or lime juice
  • 1/2 tsp honey

directions

Peel and devein the prawns leaving tails on. Whisk the remaining ingredients together and marinate prawns for 2 hours in fridge. Be careful not to over marinate. Skewer if desired, to facilitate grilling.
