Cheese and Chicken Enchiladas
ingredients
- 1 C onion -- chopped
- 2 chicken breasts -- cooked and shredded
- 1 C cheddar cheese -- shredded
- 1 C picante sauce
- 3 oz neufchatel cheese
- 1 tsp ground cumin
- 8 corn tortillas
- 1 1/2 C enchilada sauce
directions
Preheat oven to 350°
Saute onion in nonstick pan until tender. Add chicken, 1/2 c cheese, sauce, cream cheese and cumin. Cook until smooth.
Spoon mixture onto tortillas and roll up. Place in pan. Drizzle with enchilada sauce and remaining cheese
Cover and bake for 15 minutes or until cheese melts.
