Zucchini Gratin
A unique side dish and a good way to use summer zucchini.
ingredients
- 2 tbsp butter
- 1 medium onion, chopped
- 3 cloves garlic, chopped
- 6 zucchini, sliced 1/4 inch thick
- 2 plum tomatoes, chopped and seeded
- 1 tbsp fresh thyme
- 2 tbsp flour
- Kosher salt and freshly ground pepper
- 1 tbsp brown sugar
- 2 eggs, beaten
- 1/2 cup 1/2 & 1/2
- 1/4 cup grated white cheddar cheese
- 1/4 cup grated parmesan cheese

Preheat oven to 375 degrees. Butter an 8 x 8 baking dish. In large saute pan melt butter; add onion and garlic and saute until translucent. Add zucchini and tomatoes; continue cooking aobut 7 minutes. Add flour and thyme. Season with salt and pepper. Add mixture to casserole dish.

In bowl combine brown sugar, eggs and 1/2 & 1/2. Season with salt and pepper. Pour mixture over zucchini. Sprinkle with cheeses.

Bake for 30 minutes.
