Greek Salad
ingredients
- 1 cup chopped tomatoes ~ 2
- 1 cup chopped cucumber ~ 1/2
- 1/4 cup kalamata olives ~ about 7
- 1 T red onion minced
- 1/2 cup feta cheese crumbled
- 1/2 lemon’s juice squeezed
- 1/8 cup red wine vinegar
- 1/4 cup olive oil
- 1 T Greek seasonings or 1 tsp. oregano
- Pinch of mint
- 1/2 tsp. basil

Mix together.
- 2
Spoon over romaine lettuce or just eat by itself. Yummy, especially in winter if you can find a good source for tomatoes and cukes.
