WHITE BEANS, TUNA AND RED ONIONS
ingredients
- 2 cups white beans, cooked or canned and drained
- 1 can (6 ounces) tuna, packed in olive oil, drained and flaked
- 1 medium red onion, thinly sliced
- Olive oil to taste
- Red wine vinegar or fresh lemon juice to taste
- Freshly ground black pepper to taste
- Chopped fresh parsley for garnish
directions
Place the white beans in a large bowl. Top with the tuna and then the onions. Drizzle with the olive oil and vinegar or lemon juice. Sprinkle with pepper and garnish with the parsley. Serves 2 to 4.
