Erica's YUMMY Crab Cakes
ingredients

- 1/4c olive oil
- 3/4 c olive oil
- 15 green onions, chopped
- 2 1/2 (6 oz) can canned crabmeat drained
- 2 1/2 eggs
- 2 tablespoons and 1 1/2 teaspoon mayo
- 2 1/2 teasp dry mustard
- 2 rows of Ritz crackers
- 1 1/4 teasp cayenne pepper
- 2 1/2 teasp garlic powder
- 3/4 teasp Old Bay seasoning
- 2 1/2 c dry bread crumbs (progresso is fine)
- s/p to taste

Heat 2 tbsp olive oil in skillet over high heat. Saute green onion briefly until tender; cool slightly.

Combine crabmeat, sautéed green onions, eggs, mayo,dry mustard, crushed crackers, cayenne pepper, garlic powder, Old Bay seasoning, salt and pepper. Form into 1/2 inch thick patties. Coat with bread crumbs.

Heat skillet with 1/2 c oil med heat. Cook cakes until golden brown on each side.

Drain briefly on paper towels and serve hot.

If you find the mixture too watery add a little more Ritz cracker but not too much, they will get dry and you will lose the crab taste.
