Cheeseless Pesto with Fresh Herbs

  • 1 cup pinenuts
  • • 1/2 cup good quality olive oil
  • • 4-5 cloves garlic
  • • 3 tbsp miso
  • • 2 tbsp lemon juice
  • • 1 bunch fresh basil
  • • 1 bunch fresh cilantro
  • • 8-10 fresh mint leaves

directions

Process all ingredients together in a food processor until desired consistency is reached. Pesto should be slightly coarse but well mixed. You can also make this vegan pesto in a blender if you don’t have a food processor.
