Pimento Cheese
This is a classic southern dish. Both my grandmother (Mimi’s mother) and Brian’s grandmother used to make it.
ingredients
- 1/2 lb. sharp cheddar cheese
- 4 oz pimento
- 2 tbsp mayonnaise
- salt and pepper
directions
Put cheese and pimentos into food processor. Grind until smooth. Add mayonaise until creamy and spreadable. Add salt and pepper to taste. Serve on crackers, stuff into celery, or make a sandwich with it.
