A delicious creamy sausage and potato soup. Tastes just like the soup they serve at Olive Garden (make sure that you share this one with Patrice!)

ingredients

  • 16 ounces ground italian sausage
  • 2 potatoes, cut into thin slices
  • 3/4 cup chopped onion
  • 6 slices bacon
  • 1 1/2 teaspoons minced garlic
  • 2 cups kale (mustard greens will also work) - washed, dried, and shredded
  • 2 tablespoons chicken soup base
  • 1 quart water
  • 1/3 cup heavy whipping cream (use a little more for a creamier soup)

    Brown sausage in frying pan with onions

  • 2

    Add garlic, cook for one additional minute

  • 3

    Add chicken soup base, water, and potatoes, simmer 15 minutes

  • 4

    Brown bacon in separate pan, crumble and set aside

  • 5

    Add bacon, kale, and cream. Simmer 4 minutes and serve

This soup is so easy, and it tastes great. Try it with a light pasta dish or chicken marsala.
