Zuppa Toscana
A delicious creamy sausage and potato soup. Tastes just like the soup they serve at Olive Garden (make sure that you share this one with Patrice!)
ingredients
- 16 ounces ground italian sausage
- 2 potatoes, cut into thin slices
- 3/4 cup chopped onion
- 6 slices bacon
- 1 1/2 teaspoons minced garlic
- 2 cups kale (mustard greens will also work) - washed, dried, and shredded
- 2 tablespoons chicken soup base
- 1 quart water
- 1/3 cup heavy whipping cream (use a little more for a creamier soup)

Brown sausage in frying pan with onions

Add garlic, cook for one additional minute

Add chicken soup base, water, and potatoes, simmer 15 minutes

Brown bacon in separate pan, crumble and set aside

Add bacon, kale, and cream. Simmer 4 minutes and serve

This soup is so easy, and it tastes great. Try it with a light pasta dish or chicken marsala.
