Hand-Made Pesto
A delicious hand-made (no food processor) spread that is reminiscent of traditional Italian cooking.
ingredients
- A bunch of fresh basil leaves
- 3 medium garlic cloves
- 1/2 cup pine nuts
- 3/4 cup Parmesan cheese (freshly grated)
- 3-4 T. olive oil
- Pinch of salt

To create hand made pesto, all you need are the ingredients listed above and a large chopping knife.

Start by copping the garlic cloves very finely. Add to the garlic 1/3 of the basil leaves. With your knife, scrape the garlic/basil mixture and chop. Repeat until it becomes fine.

Add 1/2 of the pine nuts to mixture and chop finely. Continue scraping and chopping.

Add 1/3 of basil leaves to basil/garlic/pine nut mixture. Continue to chop finely. Add the rest of your 1/2 cup of pine nuts.

Add last 1/3 of basil leaves along with Parmesan cheese and pinch of salt to mixture. Continue to scrape and chop until very fine.

When all ingredients are incorporated, press firmly together and place in a bowl. Drizzle a couple T. of olive oil on top.

Either serve right away or refrigerate! When adding to a pasta, bread, chicken or anything edible, mix your oil into the pesto and add more if need be. ENJOY!
