Spiced Lentil Soup with Lemon Yogurt

ingredients
- sprig of fresh parsley, cilantro, thyme
- 1 celery stalk
- 3 Tbsp. olive oil
- 2 onions, chopped
- 2 carrots, chopped
- 5 cloves garlic, rough-chopped
- 1 Tbsp. cumin
- For Lemon Yogurt:
- 1/2 c. plain yogurt
- 2 Tbsp. fresh cilantro, chopped
- grated zest of one lemon
- 1 Tbsp. paprika
- 2 tsp. ground turmeric
- 2 1/2 c. French lentils
- 2 1/2 qts. vegetable stock
- juice of 1/2 lemon
- 2/3 c. heavy cream
- 2 Tbsp. butter

Wrap the fresh herbs and celery together with string. This makes a bouquet garni.

Heat the oil in a pan add the onions, carrots, garlic and spices, sauté until tender.

Add the bouquet garni, lentils and stock. Bring to a boil. Lower the heat and simmer covered for about 45 minutes until lentils are tender. Discard bouquet garni.

Remove 1/2 of the soup, Process this portion in a food processor or blender. Blend soup back together again. Stir in lemon juice, cream and butter. Taste and adjust any seasonings. Prepare the lemon yogurt with 1/2 cilantro and 1/2 lemon zest. Dish the soup into bowls garnish with lemon yogurt and sprinkle with remaining lemon zest and cilantro.
