Strawberry Shortcake Done Light
ingredients
- 3 cups fresh strawberries, sliced
- 1 tablespoon splenda
- 8 phyllo sheets
- 1 container fat free whipped topping
- 1 pkg fat free vanilla pudding
- spray butter - fat free
directions

1) In a bowl mix strawberries and splenda and refrigerate for at least 2 hours.

2) Prepare pudding according to directions using skim or low-fat milk do not let set.

3) Place a layer on phyllo dough on a baking sheet and spray with spray butter. Lay another layer over the first and spray again. Continue this until you have 4 sheets covered. Bake at 350 for 10 minutes or until golden brown and flaky. Remove from the oven and set aside. Repeat with the remaining 4 sheets.

4) Combine whipped topping, pudding and strawberries.

5) Lay the first set of phyllo in a 9X13 baking pan spread strawberry mixture and lay the second set on top. refrigerate for overnight.
notes
Low fat graham crackers can be substituted for the phyllo dough by laying them in the bottom whole and layering them on top whole. Will take longer to soften but result will be just as good.
