APPLE CAKE

- 10 - 12 green apples, peeled & cored
- 1 tsp. vanilla
- 2 cups sugar
- 1 tsp. cinnamon
- 1 cup butter or margarine
- 1 egg
- 3 cups flour
- 1 tsp. baking powder
- dash salt

Preheat oven to 350°.

Coarsely grate apples. Add vanilla, 1 cup sugar (more or less to taste) and cinnamon and set aside.

Cream remaining cup sugar and butter until light and fluffy. Mix in egg.

Combine flour, baking powder and salt. Add slowly to creamed mixture. Combine well. Divide dough into unequal parts. Use the larger part to line bottom and sides of greased 9 x 13’’ baking pan. Press dough into place with finger tips. Spread apple mixture over dough. Crumble the remaining dough on top. Bake for 1 1/4 hours or until done.
