Tropical Pork Chops
ingredients
- 1/3 c ketchup
- 2 Tbs prepared mustard
- 1 Tbs brown sugar
- 1 Tbs cider vinegar
- 1 1/2 tsp soy sauce
- 1/8 tsp garlic powder
- 1/8 tsp onion salt
- Dash of cayenne pepper
- 4 boneless pork chops
- Salt and pepper to taste
- 1/4 c chopped onion
- 2 garlic cloves minced
- 1 Tbs vegetable oil
- 1/3 c water
- 1/4 c pineapple tidbits
- Hot cooked rice
directions
In a saucepan, combine the first 8 ingredients. Cover and simmer until sugar is dissolved, about 10 minutes. Remove from the heat; set aside. Season pork chops with salt and pepper. In a skillet, cook pork, onion and garlic in oil until meat is browned. Add water and reserved sauce. Cover and cook over medium heat for 20 to 25 minutes or until the meat is no longer pink, adding more water if needed. Stir in pineapple and heat through. Serve over rice.
