Cajun Style Brunch Bake
You can make this breakfast the night before and refrigerate until morning.
ingredients
- 6 eggs, lightly beaten
- 2 cups milk
- 1 lb sliced baked, cooked and crumbled
- 6 slices bread, cubed
- 1 medium potato, peeled and diced
- 1 cup shredded cheddar cheese
- 1/2 finely chopped onion
- 2 tsp cajun seasoning

1. In a large bowl, combine all the ingredients. Transfer to a greased 11 x 7 inch baking dish. Cover and refrigerate overnight.

2. Remove from the refrigerator 30 mts. before baking. Bake, uncovered, at 350 for 45 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting.
