Zucchini Latkes
Lighter than potato latkes says gourmet mag.
ingredients
- 3 lbs
- 1 1/3 cups fine plain bread cumbs
- 2 large eggs lightly beaten
- 1/2 tsp dried marjoram
- 1cup oil for frying

Great zucchini, transfer to bowl and toss with 2 tsp salt. Let stand 30 minutes squeeze out excess moisture in kitchen towel. Transfer zucchini to a large bowl and stir in bread crumbs, eggs marjoram, salt and pepper.

Preheat oven to 200

Heat cast iron 12 inch skillet with 1/3 cup oil scoop 2 tablespoons mixture into skillet. flatten with a fork. Fry until golden brown about 2 minutes per side. keep warm in oven as you cook.
