Jill (and Ian's) Green Rebel Quinoa Salad
ingredients
- 1 cup of green lentils- cooked al dente
- Handful of rocket coarsely diced
- Handful of parsley finely diced
- 1/2 red pepper finely diced
- 1/2 of small red onion very finely diced
- 1 tablespoon of freshly squeezed lemon or lime juice
- 2 tablespoons olive oil
- Salt to taste
- Feta cheese crumbled to taste

Be careful not to over cook the lentils, will be ruined

Rinse lentils in cold water and put in fridge for 1 hour before mixing with other ingredients.

Combine all ingredients in bowl and put the feta cheese last
- 4
Keep refrigerated when done.
