ingredients

  • 1 cup of green lentils- cooked al dente
  • Handful of rocket coarsely diced
  • Handful of parsley finely diced
  • 1/2 red pepper finely diced
  • 1/2 of small red onion very finely diced
  • 1 tablespoon of freshly squeezed lemon or lime juice
  • 2 tablespoons olive oil
  • Salt to taste
  • Feta cheese crumbled to taste

    Be careful not to over cook the lentils, will be ruined

  • 2

    Rinse lentils in cold water and put in fridge for 1 hour before mixing with other ingredients.

    Combine all ingredients in bowl and put the feta cheese last

  • 4

    Keep refrigerated when done.
