Crawfish and Sausage Jambalaya
ingredients
- 2 tbs vegetable oil
- 2 cups chopped onion
- 1 cup chopped bell pepper
- 1/2 cup chopped celery
- salt and cayenne pepper
- 1 lb smoked sausage
- 4 bay leaves
- 2 cups chopped tomatoes
- 1 tbs chopped garlic
- 2 cups white wine
- 3 1/2 cups chicken stock
- 2 pounds shrimp
- 1 cup chopped green onions

1. In a large saucepan heat heat the oil. When hot, add onions, pepper, and celery. Season with salt and cayenne. Saute for 5 minutes.

2. Add sausage and cook for 2 minutes. Add bay leaves, tomatoes, and garlic. Saute for 2 minutes. Stir in the rice and saute for 2 mts.

3. Add the stock. Season with salt and cayenne. Bring the liquid up to a boil and reduce to a simmer. Cook the jambalaya for 25 mts, covered, or until the rice is tender and the liquid has been absorbed. Stir in the shrimp and green onions and re-season, if necessary.
