Penne Arrabbiata
ingredients
- 5 oz. pancetta, cut into small strips
- 1/3 cup virgin olive oil
- 2 fresh red chili peppers, seeded and finely sliced
- 3 cloves of garlic, finely chopped
- 2 cans tomatoes with juice
- salt
- parsley
- 1 lb penne
- pecorino romano cheese

Sauté pancetta in the oil in a frying pan over medium heat until crispy and lightly browned, 5 min.

Remove from heat and transfer the pancetta to a plate and keep it warm,

In the same oil, sauté the chili pepper and garlic until the garlic is a pale gold, 2-3 minutes.Stir in the tomatoes and season with salt. Add parsley and simmer until the tomatoes have broken down, about 15 minutes.

Meanwhile, cook the pasta in a large pot of salted water.

Add the pancetta to tomato sauce and simmer for 3 minutes.

Add pasta to the sauce, sprinkle with cheese, and serve.
