Swiss Onion-Cheese Soup
ingredients
- 6 medium onions, peeled and slices
- 6 Tbsp. butter
- 8 cups beef bouillon
- Nutmeg, salt and pepper to taste
- 2 cups grated Swiss cheese
- 6 slices toasted French Bread

Separate onion slices and saute them lightly in the butter in a large saucepan or kettle. Add the bouillon and bring to a boil. Lower the heat and stir in 1 1/2 cups of the cheese, nutmeg, salt and pepper. Cook over low heat, covered until cheese melts.

To serve, place a slice of toasted French bread, pour soup over it. Sprinkle with remaining cheese.
