White Chocolate, Macadamia, Coconut Blondies
ingredients
- 3/4 cups plus 2 tbs. firmly packed brown sugar
- 1 large egg
- 2 tsp. vanilla extract
- 1 tsp. coconut extract
- 1/2 cup unsalted butter, melted
- 1 1/2 cups all purpose flour
- 1/2 tsp. baking soda
- 1/8 tsp. salt
- 3/4 cup roasted macadamia nuts, chopped
- 1 cup sweetened, flaked coconut
- 3/4 cup white chocolate chips

Preheat oven to 350 degrees.

Spray 8 x 8 baking dish with cooking spray.

In medium bowl, combine sugar and egg for 3 minutes.

Add in extracts and butter.

In separate bowl, combine flour, soda and salt.

Beat flour mixture into wet mixture, careful not to over beat!

Fold in nuts, coconut and white chocolate chips.

Bake at 350 degrees for 20 minutes

Let cool, cut into 2 inch brownies
