Potato Leek Soup
ingredients
- 1 Pound Leeks
- 3 Tbl Butter
- Heavy Pinch of Salt
- 3 Small Potatoes
- 1 Quart Vegetable Broth
- 1 Cup Heavy Cream
- 1 Cup Buttermilk
- 1/2 tsp Pepper

Wash and slice leeks. Saute leeks in butter until tender, about 20 minutes.

In large pot combine potatoes, leeks, salt, broth, and pepper. Cook until potatoes are tender. Add Cream and Buttermilk and heat. Do not boil as cream will separate.
