  • 3/4 CUP FRESH MINT LEAVES + SOME EXTRA CHOPPED UP TO SPRINKLE ON TOP.
  • 4 SCALLIONS, THOROUGHLY CHOPPED
  • 3 CUPS LOW-SODIUM CHICKEN/ VEGGIE BROTH
  • 1 TSPN KOSHER SALT
  • 1 TSPN SUGAR
  • SOUR CREAM OR CRÈME FRAICH OR YOGURT :A DOLLOP OF ONE OF THESE FOR EACH SERVING.

    PLACE ALL INGREDIENTS IN A BLENDER. PUREE UNTIL SMOOTH. ADD THE DOLLOP OF SOUR CREAM,(OR WHICH EVER TOPPING YOU HAVE CHOSEN) AND FRESH MINT TO EACH BOWL.
