Cheesy Artichoke Cups

ingredients

  • 24 small wonton wrappers (3 inch squares)
  • 2 jars (6.25 ounces each) marinated artichoke hearts, drained and chopped
  • 1/4 cup chopped red bell pepper
  • 1/3 cup diced black olives
  • 1/2 Jalapeno pepper, minced
  • 1/4 cup grated Parmesan cheese
  • 1 garlic clove, pressed
  • 1/2 cup mayonnaise

    Preheat oven to 350 degrees.

    Combine chopped vegetables and remaining ingredients. Press wonton wrapper into a mini muffin tin. Fill prepared muffin cup with artichoke mixture and pinch wonton wrapper closed.

    Bake 12 to 14 minutes. Let cool in pan for 2 minutes. Carefully remove and serve warm.

You could also make the filling on it's own, put in a casserole and bake at 350 for 20 minutes. Serve with tortilla chips or bread.
