Sweet & Sour Chicken
This is my favorite of mom’s recipes!
ingredients
- 1 1/2 lbs Chicken Breasts
- 1/3 Cup Flour
- 1/3 Cup Cornstarch
- 1 1/3 Cup Chicken Broth
- 1/3 Cup Red Wine Vinegar
- 1/2 Cup Sugar
- 2 eggs
- Rice
- Soy Sauce
- Can of Pineapple Chunks (in 100% Juice)
- 1 Carrot,chopped
- 1 Green Pepper, chopped
- 1 Can of Peas

First start to cook your rice depending on instructions. Set a skillet on the stove over med high with some oil in it to warm up.

In a bowl, mix 1/3 cup flour, 1/3 cup cornstarch, 1 egg and 1/3 cup Chicken broth. Set aside.

Take the chicken and cut it into cubes then fold into the batter that was just made. After chicken is well coated place in warm skillet and cook until chicken is done, the batter will have a golden brown look.

After chicken is done, remove into an oven friendly container and keep in oven on warm.

In the hot pan used to cook the chicken, add 1/2 cup sugar, 1 cup chicken broth, 2 tsp soy sauce, and 1/3 cup red wine vinegar. Bring to a boil, stirring frequently. Add a mixture of cornstarch/water to thicken as your stirring. After it is a good consistency add the drained pineapple chunks. Also add the cut up green peppers and carrots.

Once rice is done, fry in a pan with soy sauce, salt/pepper,peas and one egg.

After the fried rice is done place on a plate then add chicken on top. Then pour some of the sauce over the chicken/ rice and serve.
