Balsamic Roasted New Potatoes
These potatoes are really simple and go with everything. They are always a favorite.
ingredients
- 2 T. olive oil
- 2 lbs. red potatoes quartered
- 1 T. minced garlic
- 1 tsp. thyme
- 1 tsp. rosemary
- 1/8 tsp. ground nutmeg
- 3 T. balsamic vinegar
- 1/2 tsp. salt
- 1/4 tsp. pepper
directions
In a large bowl toss oil, potatoes and next 4 ingredients. Place in a baking dish and roast potatoes uncovered at 425° for 40 minutes or until potatoes are tender, stirring occasionally. Add vinegar and toss well. Sprinkle with salt and pepper. Roast, uncovered for 6 more minutes.
