Colorado Blue Cheese Spread

ingredients

  • 8 oz. best quality blue cheese
  • 1/3 cup chopped red onion
  • 1/3 cup olive oil
  • 1 Tb fresh lemon juice
  • 1 Tb red wine vinegar
  • 1 clove minced garlic
  • 1 tsp dry mustard
  • 1/4 tsp fresh ground pepper
  • 1/2 cup combined chopped fresh parsley and cilantro
  • 1/3 cup toasted pine nuts

directions

Crumble or chop blue cheese and place in a 9" round dish with raised sides - a ceramic quiche dish works well but any round serving dish will work. In a food processor, combine onion, olive oil, lemon juice, vinegar, garlic , mustard and pepper. Pulse to blend. Pour over cheese and sprinkle with cilantro/parsley mix, top with pine nuts. Let stand at room temp for 2 hours before serving. Serve with toasted pita triangles or crackers.
