So glad to get this one Nancy. It’s become a favorite!

ingredients

  • Cut fine:
  • 2 firm tomatoes
  • 2 avocados – firm but not rock hard
  • Sm red onion
  • Drain well then add to the following:
  • 1 Can Fiesta corn (corn w/ red peppers)
  • 1 Can black beans
  • Mix well:
  • 1/4 c. olive oil
  • 1/4 c. vinegar
  • Pkg dry Italian dressing

    Pour over all and gently stir through.

    Serve with “Scoops” Tostitos.

  • 3

    Hint: taste is best after refrigerated overnight. Store air-tight with avocado pits lying on top. These keep avocado from turning dark. Remove pits before serving.
