Avocado Dip
So glad to get this one Nancy. It’s become a favorite!
ingredients
- Cut fine:
- 2 firm tomatoes
- 2 avocados – firm but not rock hard
- Sm red onion
- Drain well then add to the following:
- 1 Can Fiesta corn (corn w/ red peppers)
- 1 Can black beans
- Mix well:
- 1/4 c. olive oil
- 1/4 c. vinegar
- Pkg dry Italian dressing

Pour over all and gently stir through.

Serve with “Scoops” Tostitos.

Hint: taste is best after refrigerated overnight. Store air-tight with avocado pits lying on top. These keep avocado from turning dark. Remove pits before serving.
