Baked Vidalia Cheese Spread
Classic cocktail buffet fare.
ingredients
- 1 cup mayonnaise
- 8 oz cream cheese
- 2 cups grated Jarlsberg cheese
- 2 cups coarsely chopped Vidalia onions
- 8 slices bacon, cooked and crumbled
- 1 cup crushed Ritz crackers

Preheat oven to 350.
- 2
Cook onions in olive oil over med low heat until nicely caramelized, about 20-30 min. Cool slightly and mix onions with mayo and cheese in a food processor until blended. Scoop into a shallow baking dish and top with crumbled bacon and coarsely crushed crackers. Bake for about 30 min, until golden and bubbly.

Serve with crackers.

Alternately, spread about two teaspoons of unbaked spread on lightly toasted slices of thinly sliced french bread, omit crackers, place on baking sheet and bake at 400 for about 10 min or until golden and puffed

Also good made with Colby cheese and topped with sliced almonds.
