Grandma Mo's Country-Style Ham and Bean Soup

This hearty soup is perfect in its simplicity. Don’t forget the Club crackers!
ingredients
- 1 pound beans
- 12 cups water
- hambone or ham
- 1 stalk celery, diced
- 1 carrot, diced
- 1 small onion, diced
- salt and pepper to taste

Soak beans in 6 cups of water overnight. Pour off water and replace with 6 cups of fresh water.

On stove, add celery, carrot, and onion to water and beans. Cover pot and bring to a boil over medium high heat.

Turn heat down to about 1/3, and let simmer an hour-and-a-half or so, until beans are soft. Stir every half hour.

About halfway through, smash up some of the beans to thicken the soup.

Season with salt and pepper, and serve.
