Stuffed Spinach, Cheese and Italian Sausage Shells

ingredients

  • 1 box Jumbo Shells
  • 8 oz. ricotta cheese
  • 1/2 cup parmesan (either shredded or grated will do)
  • 1/2 cup shredded mozzarella
  • 8-10 oz. cooked/chopped spinach
  • 1 egg
  • 26 oz. spaghetti sauce
  • 1 clove minced garlic
  • 1 Tb. italian seasoning
  • 1 lb. mild italian sausage

    Preheat oven to 375°.

    Cook 20 Jumbo shells in salted water until al dente. Do not overcook. Strain. At the same time, brown italian sausage, drain and pat to dry and soak up any leftover fat.

    In a bowl, mix ricotta, parmesan, mozzarella, italian seasoning, egg and garlic in a bowl. Mix in spinach and cooked italian sausage.

    Take filling and stuff each shell full with it. Place stuffed shells in 9x13 glass baking dish. Pour sauce evenly over shells.

    Cook covered for 20 minutes. Uncover and cook for 10 additional minutes. Allow to cool 5 minutes before serving.
