Cheddar, Tomato and Basil Breakfast Dish

ingredients
- 3 bacon slices
- 1 cup vertically sliced onion
- 2 garlic cloves, minced
- 8 cups cubed Italian bread (14 oz)
- 2 cup (8 oz) shredded cheddar cheese
- 3 large tomatoes, seeded, cut into 1/2 in. chunks
- 2 cup skim milk
- 1/4 cup fresh basil-thinly sliced
- 1/4 tsp salt
- 1/4 tsp thyme (dried)
- 1/4 tsp pepper
- 3 large eggs + 3 large egg whites

Cook bacon in large skillet, remove and crumble. Add onion to bacon drippings in pan, saute 4 min, add garlic--saute 1 min. Remove from heat, combine onion,garlic and bacon mixture.

Arrange bread cubes in bottom of greased 13 x 9 pan, top with 2/3 cup cheese, half onion mixture, 1/2 of tomato chunks. Combine milk, eggs and remaining ingred. Pour 1/2 of that over bread mixture-repeat layer bread cubes, cheese, tomato, milk mixture. Cover -chill 1 hr or up to 24 hrs

Bake 325 degrees uncovered 55 min. Sprinkle with remaining 2/3 cup cheese bake adtnl 5 min or til cheese done. Let set 5 min before cutting.
notes
Use low fat cheese- you can substitute montery jack cheese for cheddar or use mixture of both.
