Brocolli Cheese Potato Soup

ingredients
- 4 Cups Chicken stock
- 5 medium potatoes peeled and cut into cubes
- 1/2 cup diced onions
- 1/2 cup chopped celery
- Salt and pepper to taste
- 2 cups milk
- 1 stick butter or margarine
- 2 cups shredded cheddar cheese or 1/2 pound Velveeta cut into cubes
- 1 package frozen chopped broccoli
- 1/2 teaspoon salt
- Black pepper to taste
directions
Put potatoes, onion, celery and chicken stock in large soup pan. Add water if needed to cover all. Cook until potatoes are tender, approximately 15-20 minutes. Add 1 stick butter or margarine. Stir in 2 cups milk. Add 1 package frozen, chopped broccoli and heat to boiling. Turn down to simmer. Add 2 cups shredded cheddar cheese. Stir until cheese melts. Serve.
