Fettucini with Herbed Shrimp

ingredients

  • 1 lb. shrimp- peeled and deveined (can buy ready to ear or frozen)
  • 1 lb plain or spinach fettuccine
  • 1 C chopped onion
  • 6 cloves of garlic
  • 2 T olive oil
  • 1/2 C white wine or sherry
  • 1/4 C water
  • 1 T chicken bouillon
  • 1 T fresh basil or 1 tsp dried
  • 1 1/2 tsp fresh oregano or 1/2 tsp dried
  • 4 T cornstarch, dissolved in small amount of water
  • 1 tsp pepper
  • 2 medium tomatoes, seeded and chopped
  • 1/4 C Parmesan cheese
  • 1/4 C snipped parsley optional

In a large saucepan cook mushrooms, onion and garlic in hot oil until onion is just tender. In a small bowl stir together wine, chicken bouillon, herbs and pepper. Add to saucepan. Gradually add cornstarch- cook and stir until thickened and bubbly. Add shrimp- cover and simmer two minutes until shrimp turns pink. Stir in tomatoes, heat through. Spoon over hot pasta. Sprinkle
