Refrigerator Rolls

Sweet, airy rolls, perfect for holiday meals.

ingredients

  • 2 .25 oz pkgs active dry yeast
  • 2 c warm water (110°)
  • 1/2 c sugar
  • 1 tsp salt
  • 6 c unbleached flour
  • 1 egg, beaten
  • 1/4 c vegetable oil

The Night Before

In a mixing bowl, dissolve yeast in warm water. Add sugar, salt, and 2 cups flour. Beat on medium speed for 2 minutes. Add egg and oil, mixing well. Stir in enough remaining flour to form a soft dough (do not kneed). Place in a greased bowl, turning once to grease top. Cover and refrigerate overnight.

In The Morning

Punch dough down. Turn onto a lightly floured surface; divide into 24 pieces. Shape each piece into a ball. Place balls 2 inches apart on greased baking sheets. Cover and let rise in a warm place until doubled in size (about 2 hrs). Bake at 400° for 12-15 minutes or until golden brown. Allow to cool on wire racks.
