Pear, Chicken, and Feta Salad
ingredients
- 6 cups mixed salad greens
- 1 medium ripe pear, sliced
- 1 1/2 cups cooked chopped or shredded chicken breast meat
- 1/4 cup crumbled feta cheese
- 1/4 cup dried cranberries
- 1/4 cup chopped pecans, toasted
- 1/4 cup olive oil
- 2 tablespoons white wine vinegar
- 2 tablespoons fresh orange juice
- 1/2 teaspoon grated orange peel
directions
In a large salad bowl, combine greens, pear, chicken, feta, cranberries, and pecans. In a small bowl, whisk olive oil, vinegar, orange juice and peel, and salt and pepper to taste; drizzle about 4 tablespoons over salad and toss gently. Serve immediately.
