Mexican Bean Chicken Chili

This is a hit with the guys.

ingredients

  • 1 16oz can of black beans
  • 1 16oz can of corn
  • 1 8oz can of tomato paste
  • 1 large box of Swanson’s beef broth
  • 1 16oz jar of Pace hot salsa
  • 1 tbsp of chili powder
  • 2 chicken breast cubed (boneless/skinless)
  • Salt and pepper

    Mix beef broth, salsa and tomato sauce together in a stock pot

  • 2

    Add drained vegetables and chili powder.

  • 3

    Season chicken with salt and pepper. Add chicken to soup mixture once done. Let flavors marry.

  • 4

    For presentation add shredded cheese and tortilla chips on top of each bowl.
