Chinese Chicken Salad
ingredients
- CHICKEN SALAD
- 2 Chicken Breasts (boneless are easier, but overcook more quickly)
- 1 large head of iceberg lettuce, sliced thin
- 3-4 green onions. sliced thin
- 1/2 cup sliced almonds
- 1/4 cup sesame seeds
- 1 cup or more chow mein noodles
- DRESSING
- 1/4 cup salad oil
- juice of 1 lemon
- 4 tablespoons white wine vinegar and/or rice wine vinegar
- 4 tablespoons sugar
- 2 teaspoons salt
- 1/4 teaspoon black pepper

Simmer chicken breasts in water or chicken broth; cut into small strips. Toast almonds and sesame seeds in frying pan or oven in a small amount of vegetable oil. Combine all Chicken ingredients except chow mein noodles.

Combine all Dressing ingredients and stir or shake well.

Just before serving toss salad with dressing and add noodles.
notes
The original recipe also called for ½ cup crumbled bacon. It is tastier that way, but I eliminated the bacon to reduce calories.
