Mexican Charro Beans

  • In a dutch oven saute onion, pepper, and ham until soft(using 1-2 tbsp. oil). (If using bacon, saute bacon first, set aside and saute onion and pepper in the bacon grease)

  • Add all other ingredients except cilantro to pot. Simmer 2-3 hours occasionally adding water to keep bean mixture soupy. Add cilantro 5-10 minutes prior to serving.
