Mexican Charro Beans
ingredients
- 2 large cans pinto beans plus 1 small can
- 4-6 cups water
- 6 oz ham or bacon
- 2 cups chopped fresh tomatoes
- 1 cup chopped onion
- 2 jalapeno peppers or 4 fresh serranos or to taste
- 2 cloves garlic, sliced
- 1 teaspoon salt
- 1/2 cup chopped cilantro

In a dutch oven saute onion, pepper, and ham until soft(using 1-2 tbsp. oil). (If using bacon, saute bacon first, set aside and saute onion and pepper in the bacon grease)

Add all other ingredients except cilantro to pot. Simmer 2-3 hours occasionally adding water to keep bean mixture soupy. Add cilantro 5-10 minutes prior to serving.
