Creamed Spinach
ingredients
- 4 TBLS unsalted butter
- 2 chopped yellow onions
- 1/4 cup flour
- 1/4 tsp grated nutmeg
- 1 cup heavy cream
- 2 cups milk
- 5 10 oz packages frozen spinach, thawed
- 1 cup Parmesan cheese
- 1 TBLS kosher salt
- 1/2 tsp pepper
- 1/2 cup grated Gruyere cheese

Preheat oven to 425

Melt the butter over medium heat

Add onions and saute until translucent

Add flour and nutmeg and cook, stirring, 2 more minutes

Add cream and milk and stir until thickened
- 6
Squeeze as much liquid as possible from the spinach and add the spinach to the mixture

Add 1/2 cup of Parmesan and mix well

Season to taste with salt and pepper

Transfer spinach to a baking dish and sprinkle with remaining Parmesan and Gruyere

Bake for 20 minutes
