Minestrone Soup
Great soup for lunch or dinner
ingredients
- 1 clove garlick-minced
- 2 cups chopped onion
- 1 cup chopped celery
- 1/4 cup chopped parsley or dried
- 1/4 cup olive oil or vegetable
- 3 (8 oz) cans tomato sauce
- 1 (10 oz) beef broth or 2 cubes
- 7 cups water
- 1 head of cabbage coarsley chopped
- 2 carrots sliced
- 1 zucchini squash
- 1 tablespoon salt
- 1 cup green beans or peas
- 1/4 teaspoon pepper
- 1 cup elbow macaroni
- 1 can kidney beans
- optional grated parmesan cheese
directions
In a large pot, saute garlic, onion, celery, and parsley in oil till soft. Stir in tomato sauce add next 7 ingredients. Stir and to boil. Lower heat, cover and simmer slowly one hour. Add kidney beans and other ingredients, expect cheese, cook 10 to 15 minutes longer or until macaroni is tender. Serve with cheese. makes 8-10 servings. I add italian sausage it makes it extra special.
