Greek: Walnut Cake
ingredients
- 4 eggs
- 2 cups sugar
- 1 cup vegetable oil
- 1 cup milk
- 1 ounce cognac
- 1 teaspoon baking soda diluted in 1 ounce lemon juice
- grated peel from 1 orange
- 1 teaspoon baking powder
- 2 cups all purpose flour
- 2 cups chopped walnuts
- For Syrup:
- 3/4 cup granulated sugar
- 2 cups water
- 1 teaspoon lemon juice

1. In a large bowl, using an electric mixer, beat the eggs with sugar until light and fluffy. Add oil and continue beating at medium speed.

2. While mixer is beating, add the milk, cognac, the baking soda diluted in lemon juice, grated orange peel, baking powder, cloves, cinnamon, flour and chopped walnuts.

3. Spoon batter into a 13 X 9 inch baking pan that has been buttered and floured.

4. Bake cake in 325’ oven for 45 minutes or until an inserted wooden toothpick comes out clean.

5. While cake is in the oven, make the syrup. Boil water with the sugar and lemon juice about 5 minutes; syrup should be light and pourable, but not too thick.

6. Pour syrup over cake as soon as the cake is removed from the oven. Let the syrup soak through the cake before serving.
