Roasted Chicken with grapes and ginger
Good for buffet
ingredients
- whole chicken about 3 1/2 pds
- grate 4 1/2 oz fresh ginger
- 8 + cloves garlic roughly chopped
- juice of a lemon
- 2 T olive oil
- 3 lg pinches of cinnamon
- salt and pepper to taste
- 5 shallots peeled and chopped
- 1 1/4 pds green grapes
- 1 1/4 pds red grapes
- 1 C chicken broth

Rub chicken with 1/2 the ginger, garlic, cinnamon, olive oil and lemon juice and season with salt and pepper. marinate for 2 days or more.

place chicken in roasting pan and stuff cavities with as many grapes as possible and 1/2 the shallots, pouring remaining marinade over chicken.

Roast 1-2 hours at 350F until done.

Transfer chicken to platter and tent with foil to keep warm.

pour off any liquid in the roasting pan and add remaining olive oil to pan and heat. add remaining shallots and saute until softened. add remaining ginger, chicken broth, remaining grapes and reduce until grapes are heated through. carve chicken and pour defated broth with grapes over the chicken pcs.
